Apple-Cinnamon Foccacia with Maple Glaze

Combining classic Italian focaccia with the warm, cozy flavors of spiced apples and maple, this bread is beginner-friendly and the perfect dessert for your holiday gatherings!

Maple glaze on apple cinnamon focaccia fresh out of the oven for Thanksgiving!

Apple cinnamon focaccia brings a light yet indulgent element to your holiday menu. Its golden, dimpled surface and aromatic topping make it as visually appealing as it is delicious. Serve it warm — your guests will love the crisp edges, the soft and fluffy interior, and the FLAVOR most of all!

This sourdough dessert is extremely easy to make, for even the most beginner bakers! Common pantry staples like flour, honey, butter, apples, and cinnamon come together to create a dessert that feels sophisticated and you’ll feel like an expert baker after this one - or at least I did! :)

Note: This takes 2 days to make, so start it the night before your event.


Recipe

The Night Before:

Dough Ingredients:

1/2 cup Active Starter (100g)

1-2/3 cup Water (375g)

3 tsp Honey (30g)

4 cups Bread Flour (500g) - I use Anna Napoletana unbleached “00”. I also hear good things about King Arthur bread flour and it’s easier to find!

1-1/2 tsp Salt (10g)

Before it rises, the dough should be significantly moist but not dripping wet, and it should stretch easily without ripping. If you need to add more water to your dough, add a small amount at a time until you reach the right consistency.

Step 1: Combine the above ingredients in a large mixing bowl. Let it sit for 30 minutes with a damp towel over the top of the bowl.

Step 2: Stretch and fold the dough 4 times, turning the bowl 1/4 turn between folds.

Step 3: Cover the bowl again and let rest 15 minutes before performing another round of stretch and folds (step 2).

Step 4: Cover the bowl again with either a towel or plastic wrap and let it sit out on the counter overnight (10-12 hours).


The Next Morning

Cinnamon Sugar Butter Ingredients:

1 Stick of butter, melted

2 tbsp Cinnamon (measure with your heart)

1/4 cup Brown Sugar

1 Apple, Peeled, Cored, and Thinly Sliced/Diced

Icing Ingredients:

1 tbsp Maple Syrup

1 cup Powdered Sugar

1 tbsp Milk, Cream, or Water


Preheat oven to 425 degrees Fahrenheit

Step 1: Melt 1 stick of butter and use a spoonful or so to grease your baking pan

Step 2: In the remaining bowl of melted butter, add in your cinnamon and brown sugar, stirring to combine.

Step 3: Using your fingers, dimple the dough (poking the dough with all your fingers on each hand to stretch it out and fill the baking sheet). Don’t rip the dough!

Step 4: Pour the butter mixture over the top of the dough and dimple one more time to make sure the flavors get into all the little divots.

Step 5: Spread your peeled and sliced apple over the top of the dough.

Step 6: Cover with foil to prevent apples from burning and bake for 15 minutes.

Step 7: Remove the foil and continue baking for another 20 minutes.

Step 8: While baking, mix all the icing ingredients together in a bowl.

Step 9: Remove your bread from the oven and pour the icing over the top.
